Pumpkin Brownies

The recipe for a healthy and delicious any time snack, Pumpkin Brownies

4 large eggs
500g cooked pumpkin
1/2 cup oil
1/2 cup milk
2 cups Nutty-Wheat flour
1/2 cup castor sugar
1/2 cup pecan nuts, chopped
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp cinnamon
1/2 tsp salt
50g milk chocolate, melted (Optional for the garnish)

Preheat the oven to 180 C. Beat the eggs in a large mixing bowl.

Add the cooked pumpkin, oil and milk to the eggs. Mix well.

Combine the flour, castor sugar, pecan nuts, baking powder, bicarbonate of soda, cinnamon and salt.

Pour the egg mixture over the dry mixture and combine thoroughly.

Lightly grease a large baking tray and pour in the pumpkin mixture.

Bake the pumpkin brownies for 25-30 minutes. Allow to cool and cut into squares.

Drizzle with melted chocolate.
