Marshmallow Mousse

The recipe for an all time children's favourite, Marshmallow Mousse. A sweet treat for both young and old

Ingredients
20 marshmallows
250ml (1 cup) fruit juice (preferably strawberry juice of its available)
1 tablespoon lemon juice
250ml (1 cup) cream
57g sugar

Method
Add the marshmallows to the fruit juice and heat in a double-boiler until the marshmallows have melted.

Allow to cool, and then add the lemon juice.

Beat the cream until stiff while adding the sugar gradually.

Mix with the marshmallow mixture and cool.

About 20 minutes cooking time
