Diet Puddings

On a diet? You don't have to avoid the pudding.

Trying out some of our desserts will really help with dietary adherence because you won't feel quite so deprived as you continue on with your weight loss diet.

More importantly, though, the following desserts actually provide quality nutrition that will help you recover from your workouts and stroke your metabolism so you burn fat at an elevated pace 24 hours a day.

Carrot Cake Muffins

½ cup brown sugar
½ cup sugar or sugar substitute
½ cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp ground nutmeg
1/8 tsp ground ginger
4 egg whites
½ cup unsweetened applesauce
1 cup grated carrot
¼ cup virgin coconut oil (or olive oil if you don't have coconut)

Preheat oven to 350F and grease a muffin pan or line with paper cups.
Next, combine brown sugar, sugar, flour, baking soda, cinnamon, nutmeg, and ginger into a bowl. In a separate bowl, beat egg whites until frothy, and then stir in the applesauce, granted carrot and oil. Fold this wet mixture into the dry ingredients and stir until moistened.
Spoon into muffin cups and bake for 45 to 60 minutes.
Makes 12 muffins.

If you'd prefer to make these cupcakes more post-workout friendly, you can replace the oil with additional applesauce to cut down on the fat content and replace the sugar or sugar substitute with dextrose powder, making them a very good source of carbs for immediately after a lifting session.

Fruit Mousse

This is a very simple recipe to prepare and makes the perfect snack before bed due to its slow-digesting protein content and low carb nature.

1 package sugar-free Jelly
1 cup hot water
1 cup low-fat cottage cheese

Begin by preparing one package of sugar-free Jelly in whatever flavor you prefer, only omit the one cup of cold water, only using one cup hot water to prepare. Once the powder has been dissolved, let it set in the fridge.
Once it is finished, combine in a blender the set Jell-O along with one cup of low fat cottage cheese. Blend until smooth and then place in the fridge once again to let set the second time.
Next, spoon the mousse into individual serving cups and top with a few sliced strawberries, peaches or fresh raspberries, and fat free whipped topping.

Peanut Butter-Chocolate Crepes

¼ cup rolled oats
4 large egg whites
½ cup of low fat cottage cheese (1% or 2% works best)
½ cup chocolate protein powder

Blend all the ingredients together until you have a smooth batter. Spoon the batter onto a hot skillet and cook for one to two minutes. Flip, and cook for another one to three minutes until finished.
Remove from skillet and spread with 1 tbsp to 2 tbsps of natural peanut butter.
This is a good dessert for men on diets because it has a good mix of slow-digesting carbohydrates, protein and healthy fats.

Blueberry Cheesecake

2 8 oz. containers of fat free cream cheese
1 egg + 2 egg whites
½ cup sugar or sugar substitute
½ cup skim milk
1 tsp light margarine
Crushed cream crackers for the crust (about ¼- ½ cup depending on desired thickness)
¼ cup sugar free blueberry jam

Preheat the oven to 325F.
Beat together both the containers of cream cheese. Next, add the egg and egg whites and beat for another 30 seconds. Add the sugar, skim milk and light margarine until mixture is smooth.
Crush the cream crackers and press into a non-stick or sprayed pie plate. Pour cheesecake batter over top. Finally, spread the blueberry jam over the top, swirling it into the cheesecake with your knife. Place in the oven to bake for 30 to 40 minutes.
Let the cheesecake sit in the fridge overnight or for at least four hours before eating.
