These three good-morning glories recipes are excellent and healthy ways to start your day on the right foot especially on the morning after the night before.


Melon-Mango Cup

1/2 cup diced cantaloupe
1/2 cup diced mango
2 teaspoons lime juice
Pinch of ground nutmeg
1 cup fat-free plain yogurt
2 tablespoons chopped pecans

1. Combine the cantaloupe, mango, lime juice, and nutmeg in a small bowl.
2. Place one-third of the yogurt in a tall glass. Top with one-third of the fruit mixture and one-third of the pecans.
3. Repeat the layers twice, using the remaining ingredients. Garnish with additional nutmeg, if desired.


Western Egg Sandwich

1 slice uncured, nitrate-free deli ham
1 whole wheat English muffin, toasted
1 large egg
Salt
Freshly ground black pepper
1 slice Cheddar cheese
1–2 teaspoons ketchup (The Woolies Ketchup is very nice for this)

1. Fold the ham on the bottom half of the muffin. Set aside.
2. Coat a small nonstick skillet with canola oil cooking spray and place it over medium heat. Add the egg and cook it for 1 minute, breaking the yoke slightly with a spatula, until set.
3. Fold the egg in half and cook it for 1 minute longer. Season it with salt and pepper.
4. Flip the egg and place the cheese on top. Cover and cook for 2 minutes, or until the cheese is melted.
5. Place the egg on top of the ham. Spread the ketchup on the remaining muffin half and place it on top of the egg.


Raspberry-Ricotta French Toast

1 cup raspberries
1 teaspoon honey
1/4 cup fat-free ricotta cheese
1 large egg
1 tablespoon fat-free milk
1/4 teaspoon ground cinnamon
1 slice multigrain bread
1 tablespoon chopped pecans

1. Mash 1/4 cup of the raspberries with 1/2 teaspoon of the honey in a small bowl with a fork. Add the ricotta and stir to combine. Set aside.
2. Coat a small nonstick skillet with canola oil cooking spray and place it over medium heat.
3. Beat the egg, milk, and cinnamon in a shallow bowl. Dip the bread in the egg mixture and flip to coat both sides.
4. Transfer the bread to the skillet and cook for 1 to 2 minutes per side, or until the egg is lightly browned.
5. Top it with the reserved ricotta mixture, and sprinkle on the pecans and 1/4 cup of the remaining raspberries. Drizzle with the remaining 1/2 teaspoon of honey and garnish with additional cinnamon, if desired. Serve with the remaining 1/2 cup of raspberries on the side.
