Seductive salad

A salad of leaves chosen for their special properties

  • Mint will freshen the breath
  • Rocket excite the palate
  • Sorrel soothe
  • Lovage clear the mind
  • Lemon Balm excite the female while Rosemary excites the male. (You choose)
  • Add a few flowers for colour and to offset any nervous feelings - nasturtium is the best for this.
  • Olives, if you enjoy them, will add texture and compliment the meat you might be having in the main course of your meal.
  • If you can find them, courgette flowers also lift the spirits, and the lemon dressing refreshes the mind.

Ingredients
For the dressing
1 Egg Yolk
1 Tablespoon Dijon Mustard
3 Tablespoons fresh Lemon juice
100ml Olive Oil
A little grated Lemon zest
Salt and pepper
Finely chopped leaves of either Lemon Balm or Rosemary

For the Salad
Mixed Salad Leaves (The Woolies pre-packed kind will do in a crunch)
Herbs and flowers as described above
A few Lettuce leaves
1 Cucumber, peeled and sliced
A few Olives (Optional)

Preparation method
First make the dressing.
Whisk the egg yolk, mustard and lemon juice in a small bowl, then add the oil slowly in a very thin stream.
Add the Lemon zest, Rosemary or Lemon Balm and a little salt and pepper.
Chill and allow to steep for a few hours.
Just before serving, combine the salad ingredients and toss with the dressing.
The flowers should be added last for visual effect and also not to become wet.

This salad is designed to be light but full of flavour.
