Stir-fried salad

A vegetable salad which can also be a complete meal.

For the dressing
1 garlic clove, finely grated
2cm/1in piece fresh ginger, finely grated
½ red chilli, finely grated
1 lime, juice only
8g palm sugar
1 tbsp soy sauce
1 tbsp sesame oil
2 tsp sesame seeds, toasted

For the salad or stir-fry
¼ red onion, sliced
¼ red pepper, sliced
¼ courgette, sliced
4 yellow or green beans, sliced
30g/1¼oz beansprouts
¼ fennel, thinly sliced
50g/1¾oz Chinese leaf, shredded
1 baby pak choi, leaves separated
1 small yellow beetroot, grated
15 mint leaves
10 coriander leaves
2 tbsp pomegranate seeds

Preparation method
For the dressing, mix all the ingredients together in a bowl and set aside.

For the stir fry, in a large wok on a high heat, quickly stir-fry the salad ingredients in a teaspoon of oil for one minute, add the dressing and continue to cook for one minute, and then serve immediately.

For a salad, mix the vegetables and dressing together and serve as it is or with some grilled meat, fish, prawns.
