Pumpkin Fritters

The recipe for a classic South African side dish - Pumpkin Fritters

Ingredients

2 cups of cooked and mashed pumpkin
2 eggs
3 tbsp. cake flour
1 tsp. baking powder.
1 pinch of salt
cinnamon sugar, to serve
sunflower oil, to fry

Method

Combine all the ingredients (except the sugar and oil) in a bowl.

If the mixture is too stiff, add a splash of milk.

Heat a little oil in pan and carefully put spoonfuls of the pumpkin mixture into the hot oil.

Shallow-fry for about 5 – 10 minutes or until golden on both sides.

Drain on paper towel, sprinkle with cinnamon sugar and keep warm, while you make the rest.

About 10 minutes cooking time
Serves 2 – 3
